Chicken Laksa recipe

  • Grated palm sugar: 1 tablespoon
  • Fish sauce: 1 tablespoon

  • Quail eggs: 8
  • Dried vermicelli rice noodles: 200g
  • Trimmed bean sprouts: 2 cups or 160g
  • Thai basil leaves: ½ cup
  • Coriander leaves: ½ cup
  • Fried Asian shallots with sliced red chili for garnish


  1. In a wok heat oil over medium-high and season chicken to stir-fry for about 3 to 4 minutes so the chicken turns to golden. Remove the chicken and set aside. Add laksa paste to stir-fry in 1 minute so it is fragrant and return chicken. Add kaffir lime, coconut milk, stock and ½ cup or 125ml of water to boil by reducing the heat to medium-low. Spend 10 minutes for simmer so the chicken is cooked and stir in sugar, lime juice and fish sauce to taste.
  2. In a saucepan, place qual eggs and cover with cold water to boil over high-heat and cook in 3 minutes so it is hard-boiled and under cold water, rinse it. Peel and halve.
  3. Follow the packet instructions to cook noodles and drain it. Among four serving bowls, divide noodles and add laksa. Use bean sprouts for the topping with quail egg, shallot, chili, Thai basil and coriander to serve Chicken Laksa recipe.
