On a sheet of waxed paper or parchment, roll the pastry out to a 12-inch square and cut two 6-inch rounds from it. Put one of the rounds on a small rimmed baking sheet, sprinkle with half of the dried cherries and thyme, leaving a 1/2-inch border around the edge, and gently press so they adhere.&lt;br /&gt;&lt;br /&gt;Set the &lt;span style="font-weight: bold;"&gt;Brie&lt;/span&gt;, rind side down, on top of the pastry, sprinkle with the remaining cherries and thyme, and cover with the other pastry. Crimp the edges together to seal in the cheese. Brush the top of the dough with the butter. Bake until the pastry browns, about 20 minutes. Preheat the oven to 425 degrees F and lightly oil a flat baking sheet.&lt;br /&gt;2. Roll out your thawed sheet of puff pastry a bit.&lt;br /&gt;3. Put your wheel of brie on top of the pastry. Leave the rind on the cheese for the best result.&lt;br /&gt;4. Spread cranberry sauce (or the filling of your choice) over top of the brie. Sprinkle with almonds.&lt;br /&gt;5. Bring refrigerated pastry sheet to room temperature but do not remove packaging.Place wheel of brie on a plate and cover with apple filling. Top with nuts.&lt;br /&gt;&lt;br /&gt;When pastry sheet has reached room temperature, remove the packaging. Fold the brie into the pastry sheets and place onto a greased baking pan. Place the brie on top of the sheets. Paint the top of the brie with melted butter and about a 1/4 inch thick layer of brown sugar. Top with pecans and drizzle with melted butter. Wrap the ends of the dough up over the top. Layer another 4 phyllo sheets on top of the pile and tuck under the whole thing. Bake at 350 degrees for 30 minutes.
